The Mercure Hotel at Wolli Creek is a busy establishment for leisure travellers and businesspeople alike. The hoteliers identified an opportunity to provide a new food and beverage service experience for guests.
Working with a concept design by Rothwell Design, we constructed and implemented value-engineered finishes through an iterative sampling and prototyping process. Our approach allowed the design team to engage with the finishes and details, as well as giving our project team a chance to collaborate.
Featuring a range of custom finishes, such as bespoke banquette seating, herringbone flooring and brass and hardwood shelving, every element required meticulous coordination. The works were delivered in an operating hotel environment, which required consideration of the hotel’s operational needs. As such, we scheduled disruptive works to hours that best suited the hotel.
We identified the maximum amount of noisy works possible to be executed within these small windows, leaving the remaining fit-out to be completed at other times. The final handover saw a high-quality lounge and bar space within a traditionally under-used area of the hotel.
